Recipe: Mind Blowing (and Healthy!) Carrot Cake Truffles

Don't you just love stumbling across a recipe that's equal parts delicious and healthy? When I found this excellent recipe for healthy carrote cake truffles over at I Accidentally Ate The Whole Thing I knew I had to try it out. Anything that tastes like cake (minus the bad stuff) is a winner in my book, and they make for a perfect snack when you're craving something sweet.

Of course, I'm not swearing off sugar just yet, but whenever I can find a decent healthy alternative I'll always give it a shot. Many healthy sweet treats taste awful, but I swear by this one. Enjoy!

Carrot Cake Truffles


1 cup grated carrots
1 cup almond meal
6 large Medjool dates
1/4 cup unsweetened desiccated coconut + a little more for coating
1 tsp cinnamon
1 tsp ground ginger
1 heaped tbsp raw honey
1 heaped tbsp nut butter (I used peanut)
1 tbsp water

Place all ingredients in a food processor and blend for a minute or so until the ingredients begin to stick together (similar to a dough-like mixture).

Using your hand form small balls.

To finish, coat the balls by rolling them in the remaining coconut.

Refrigerate for a few hours before eating.
