After spending Friday eating a whole lot of dumplings and drink even more beer, I was feeling a little worse for wear on Saturday morning. Whenever I've done a bit of damage to my body I generally head to one place to correct my fried food lapses: Deliciously Ella. Her blog is filled with amazing inspiration for healthy eating and living, so it's a great source if you need a bit of an internal tune-up.
I've had Ella's Cleansing Green Soup saved on Pinterest for a while now and knew that Saturday was the perfect time to try it out. I'm so glad I did too; it's incredibly healing and soothing, packed full of vitamins, minerals, and fibre. It's also surprisingly tasty, the addition of the lemon and coriander really packs a punch.
I'll definitely be introducing this soup into my lunchtime rotation, it's soup-er (heh) easy to make and can be frozen for future meals!
Cleansing Green Soup
600ml of water
1 head of broccoli
1 tin of cannellini beans. drained and rinsed
Handful of coriander
4 cloves of garlic
2 teaspoons of cumin
Salt and pepper
Chop the broccoli into small pieces.
Crush the garlic and place it in a frying pan with the cumin, salt, pepper and olive oil. Let this heat until it’s bubbling, at this point add the broccoli.
Let the broccoli cook until it's tender, then stir in the spinach and let that wilt.
Place the cannellini beans, lemon juice, coriander and salt into a blender with the water, the broccoli and the spinach (I had to do this in two batches to avoid overflowing the blender). Blend until smooth, then heat and serve.
